Thanks to climate change Spain, as a whole, is getting more and more arid in recent years. This lack of groundwater is one of the biggest challenges facing modern Spanish winemakers, which is why their vines are sparsely planted and often trained to grow close to the ground to minimize irrigation and help protect them from the heat. Spain has been developing an innovative wine culture in recent years, for example single vineyard wines, using Burgundy as inspiration, have been officially recognised (known as Vinos de Pago), a thing that would have been unheard of even 20 years ago.
